Sweet and sour vegetable soup: A Bunch of vitamines

If you are hungry and want to eat something but you do not want to feel as if you have eaten half a ton? Then such a vegetable soup might be an option.
It is quite easy, I used white cabbage, potatoes, carrots and onions (you can vary depending on which vegetables you prefer). Just Roast all the vegetable for a short time in a pan with oil and tomato puree and then add enough water or stock. For the sweet and sour taste add a little bit of sugar, vinegar, salt and pepper. After you have cooked the soup for approx. 20-25 minutes you can add fresh parsley! This is also a suitable recipe for the fall and winter season. Enjoy!
